As we enter a new decade, the dominance of pumpkin spice as the quintessential fall flavor for beverages may be facing a challenge from other nostalgic and comforting options like apple cider and apple cinnamon. Market saturation and consumer fatigue may be threatening the reign of pumpkin spice as the go-to fall flavor.

Consumer Preferences and Trends

A recent study conducted by Rubix Foods surveyed 464 US consumers aged 18 and older in August, revealing interesting insights. Surprisingly, 47% of respondents considered pumpkin spice overrated, with 25% expressing that they were completely over pumpkin-flavored items. This indicates a growing desire among consumers for new fall-themed flavors.

When asked about their preferences for fall flavors, apple emerged as a top contender, with apple butter being the most desired flavor by 49% of respondents. Apple cider and spiced apple also ranked highly, showcasing a shift towards apple-based flavors in the fall beverage landscape.

The Rise of Apple as a Contender

According to Shannon O’Shields, Vice President of Marketing at Rubix Foods, apple has the potential to become the next big fall flavor trend. Apple’s versatility and ability to evoke nostalgia and comfort align with current consumer preferences for indulgent and familiar flavors, especially during the holiday season.

Apple cider, often paired with warm spices like cinnamon or clove, offers a cozy and nostalgic feel that resonates with consumers. Other trending fall flavors mentioned include salted maple, toasted pecan, ube, masala chai, saffron, and turmeric, which are expected to make a splash in the beverage market this season.

Classic Fall Flavors Making a Comeback

In addition to apples, classic fall flavors like caramel, pecan, maple, cinnamon, and brown sugar are experiencing a resurgence. These flavors not only offer a sensory experience but also evoke fond memories and seasonal activities, adding to their appeal among consumers.

Companies like DSM-Firmenich have identified “milky maple” as the flavor of the year for 2025, highlighting the growing interest in balanced and novel flavor profiles. Maple, mocha, and matcha are gaining momentum in the beverage industry, offering a fresh take on traditional fall flavors.

Bakery-Inspired and Cozy Flavors

Bakery-inspired flavors such as maple donut, coffee cake, cinnamon churro, and pecan pie are becoming popular in the coffee sector, providing consumers with a cozy and indulgent experience. Cocoa flavor, known for its warmth and nostalgia, is also on the rise, with manufacturers exploring ways to extend cocoa in beverages while maintaining rich flavor profiles.

Other trending beverage flavors include caramel, cinnamon, and apple variations, with brands like Starbucks introducing innovative options like pecan oat milk cortado. Fruit-led flavors like cranberry, pear, pomegranate, persimmon, fig, and quinoa offer a refreshing contrast to traditional spiced profiles, catering to diverse consumer preferences.

Embracing Innovation and Variety

While pumpkin spice remains a staple in fall offerings, consumers are increasingly seeking new and innovative flavor combinations. Pairing pumpkin spice with complementary flavors like maple, chai, or brown sugar can provide a fresh twist on a classic favorite, appealing to a wider audience.

Overall, the fall beverage landscape is evolving, with apple flavors emerging as strong contenders against the traditional pumpkin spice. Brands are exploring a diverse range of flavors to meet consumer demands for novelty, nostalgia, and indulgence during the fall season.
