This delectable corn dip offers a refreshing twist on the classic French onion dip, requiring just five simple ingredients to create. Featuring a delightful blend of tangy and savory flavors, this recipe utilizes Greek yogurt for a creamy texture and incorporates crisp corn kernels and rich caramelized onions for added depth.

Perfect for any gathering, whether it be a party or a casual get-together, this creamy corn and onion dip pairs beautifully with an array of accompaniments such as sliced vegetables, crackers, or tortilla chips.

How to Prepare Creamy Corn and Onion Dip

Ingredients

  • 2 tablespoons of extra-virgin olive oil
  • 2 onions, finely chopped
  • Kosher salt and freshly ground black pepper
  • 2 cups of fresh corn kernels (from 2 ears)
  • 1 garlic clove, minced
  • 1 tablespoon of Worcestershire sauce
  • 1 ½ cups of Greek yogurt
  • 1/2 Roma Tomato, chopped
  • Chopped green onion to taste

Directions

  1. Begin by heating oil in a large skillet over medium heat. Cook the onions with a pinch of salt, stirring occasionally, until caramelized, approximately 20 minutes.
  2. Add the corn and 2 tablespoons of water to the skillet. Cover and cook, stirring occasionally, until the corn is tender, about 5 minutes. Stir in the minced garlic and cook for an additional minute. Remove from heat and allow the mixture to cool.
  3. Set aside 2 tablespoons of the corn mixture for garnishing purposes, then transfer the remaining mixture to a bowl. Add Worcestershire sauce and Greek yogurt to the bowl, mixing well to combine. Season with salt and pepper to taste.
  4. Top the dip with chopped tomatoes and green onions.
  5. Garnish with the reserved corn mixture before serving.

Tips for Selecting Greek Yogurt:

For the creamiest texture, opt for full-fat Greek yogurt (5% fat). While reduced-fat or nonfat options can be used as alternatives, they may result in a slightly less rich dip.

Storage: Leftover dip can be stored in an airtight container in the refrigerator for up to 3 days.

Pairing Suggestions: This flavorful dip pairs well with sliced radishes for a peppery contrast to the sweet corn and onions. Additionally, consider serving it with an assortment of vegetables such as cucumbers, bell peppers, celery sticks, or baby carrots. Wavy chips, pretzel rods, kettle chips, and tortilla chips also make excellent accompaniments.
