My recent trip to Paris left me in awe of the beauty of spring. The Jardin du Palais Royal was adorned with magnificent magnolia trees casting delicate pink shadows, while daffodils and hyacinths sprouted from the ground as if welcoming us back. The vibrant energy of people enjoying the outdoors late into the night infused me with a renewed sense of vitality, dispelling any lingering winter blues. Upon returning to New York City, I was determined to carry this warmth and joy with me, despite the skepticism of my more cynical friends warning of a “false spring.” Nevertheless, I embraced the season in my heart and kitchen, whipping up a refreshing warm weather salad. Perhaps I inadvertently summoned the sudden cold spell, for which I apologize.
A Modern Twist on a Classic Favorite
Those familiar with my early recipes may recognize this updated version of the black bean confetti salad. While the original remains a staple in my kitchen, I’ve enhanced it with additional ingredients such as avocado, radishes, and an abundance of lime juice. Swapping cumin for tajín or your preferred chili powder, and making peace with cilantro, has elevated the flavor profile. I’ve also taken to using a vegetable chopper for perfectly uniform cubes of vegetable confetti, adding a visually appealing touch to the dish.
A Versatile Dish for Every Occasion
This salad effortlessly transitions from a party snack to a satisfying lunch option. I fondly recall bringing it to a friend’s tamale-making gathering, where it provided a nutritious balance to the indulgent spread of queso. On busy days, I prepare a batch to enjoy for a quick and nourishing lunch. Most recently, we enjoyed it atop simple quesadillas for a fuss-free dinner. Bringing a Taste of Paris Home
