Delicious Lemon Tart Recipe

    Crust

  • 1 cup plus 2 tablespoons (150 grams) all-purpose flour
  • 1/2 teaspoon kosher salt
  • 1/3 cup (40 grams) powdered sugar or 1/4 cup (50 grams) granulated sugar
  • 1/2 cup (4 ounces or 115 grams) unsalted butter, cold is fine, diced
  • Filling

  • 1 cup plus 2 tablespoons (225 grams) granulated sugar
  • 1/4 teaspoon kosher salt
  • 4 large or 5 medium-large lemons
  • 5 large eggs
  • 1/2 cup (4 ounces or 115 grams) unsalted butter, cold, cut into pieces
  • Whipped cream and berries, to serve (optional)
Preheat the Oven: To 350°F (175°C).

Prepare the Crust: Mix the flour, salt, and sugar in a food processor. Add cold diced butter and blend until the mixture forms clumps. Transfer the dough to a tart pan, press evenly, and freeze for 15 minutes.

Parbake the Crust: Prick the crust with a fork, cover with oiled foil, bake for 20 minutes, remove foil, and bake for an additional 5 minutes until golden. Set aside.

Make the Filling: Combine sugar, salt, lemon zest, eggs, and lemon juice in a pot. Cook over low-medium heat until thickened. Add butter and pour into the tart crust.

Bake the Tart: Bake for 15 minutes until the filling is set. Chill the tart in the fridge to set completely.

Serve: Remove the tart from the pan, cut into wedges, and serve with whipped cream and berries.
