charred salt and vinegar cabbage – MF

The Perfect Roasted Green Cabbage Recipe

If you’re like me, you often overlook the humble green cabbage tucked away in the back of your fridge. However, this recipe will change the way you see this inexpensive and versatile vegetable. Originally featured in the cookbook Smitten Kitchen Keepers, this dish is a surprising favorite that will delight your taste buds.

Ingredients:

  • 2 pounds (905 grams) green cabbage, halved, cored, and chopped into chunks
  • 2 tablespoons (25 grams) olive oil
  • 1 teaspoon (3 grams) kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons (30 grams) unsalted butter
  • 4 garlic cloves, smashed
  • 1/3 cup (80 grams) vegetable broth
  • 1/3 cup (80 grams) white vinegar
  • Sea salt, for finishing

Directions:

Preheat your oven to 475°F (245°C).

Place the cabbage on a baking sheet and toss with olive oil, salt, and pepper. Make sure the cabbage is coated evenly and leave the chunks intact. Dot the butter over the top and roast for 15 minutes until the cabbage is slightly charred.

Turn the cabbage over, add the garlic cloves, and roast for another 15 minutes until the cabbage is charred to perfection. Pour in the broth and vinegar, then roast for an additional 15 minutes until the garlic is tender and the liquids have reduced.

Finish with a sprinkle of sea salt and enjoy the crispy bits straight from the pan.

With this simple and flavorful roasted green cabbage recipe, you’ll never look at this vegetable the same way again. Give it a try and prepare to be amazed!
